Base:
- 120g plain flour
- 80g caster sugar
- 2 tbsp cocoa powder
- ½ tsp baking powder
- 60g melted coconut oil
- 130mL Otis chocolate oat milk (room temperature)
Topping:
- 3tbsp light brown sugar
- 2 tbsp cocoa powder
- 60g dark chocolate, finely chopped
- 120mL boiling water
Method
- Pre-heat the oven to 180 degrees and lightly grease a baking tin or pie dish.
- Whisk together the dry ingredients in a large bowl.
- Make a well in the centre and add the Otis Chocolate and coconut oil. Fold both dry and wet ingredients together until just combined. Pour the batter into your chosen dish.
- In a small bowl, combine together the brown sugar and cocoa powder. Sprinkle this evenly over the batter.
- Lastly, add the chocolate to a bowl and pour over the boiling water, stirring the mixture until the chocolate melts. Pour this over the batter and sugar mixture.
- Place the dish in the oven and bake for 25-30 mins, until the centre looks mostly set.
- Now for the best part! Let it cool ever so slightly before serving with your favourite (dairy-free or not) ice cream or yoghurt.
Give it a whirl, and let us know what you think!
