Vegan Chocolate Self-Saucing Pudding

We had a little request to provide more chocolate milk cooking inspiration, so if you ask then we will certainly strive to deliver! This vegan chocolate self-saucing pudding is incredibly decadent, rich and delicious. It’s highly likely to send you into a chocolate coma so not one for the weak, but for a chocolate lover this would be the ultimate dessert dream.

Base: 

  • 120g plain flour  
  • 80g caster sugar 
  • 2 tbsp cocoa powder 
  • ½ tsp baking powder 
  • 60g melted coconut oil 
  • 130mL Otis chocolate oat milk (room temperature) 

 Topping: 

  • 3tbsp light brown sugar 
  • 2 tbsp cocoa powder 
  • 60g dark chocolate, finely chopped 
  • 120mL boiling water 

 

Method

  1. Pre-heat the oven to 180 degrees and lightly grease a baking tin or pie dish.
  2. Whisk together the dry ingredients in a large bowl.
  3. Make a well in the centre and add the Otis Chocolate and coconut oil. Fold both dry and wet ingredients together until just combined. Pour the batter into your chosen dish.
  4. In a small bowl, combine together the brown sugar and cocoa powder. Sprinkle this evenly over the batter.
  5. Lastly, add the chocolate to a bowl and pour over the boiling water, stirring the mixture until the chocolate melts. Pour this over the batter and sugar mixture.
  6. Place the dish in the oven and bake for 25-30 mins, until the centre looks mostly set.
  7. Now for the best part! Let it cool ever so slightly before serving with your favourite (dairy-free or not) ice cream or yoghurt.
