Vegan Banana Bread

Banana bread – one of the biggest revelations and go-to bakes of the 2020 lockdown. It’s a timeless classic and always a crowd-pleaser, so give Otis’ version a try and see if it rivals the tastiness of grandma’s secret recipe. 

 

Ingredients 

  • 3 large very ripe bananas + additional for decoration. 
  • ½ cup firmly packed brown sugar 
  • ½ cup coconut oil  
  • ¼ cup Otis Everyday or Barista milk 
  • 2 tsp vanilla extract 
  • 1 ½ cups plain flour 
  • 3 tsp baking powder 
  • 1 tsp ground cinnamon  
  • ½ tsp ground ginger 
  • ½ tsp salt 
  • 1/3 cup raisins/ chopped dates 
  • 1/3 cup chopped walnuts 

 

Method  

  1. Preheat the oven to 180 degrees and line a 22x 11cm loaf tin with baking paper.  
  2. Place the mashed bananas in a large bowl with the brown sugar and coconut oil. Mix to combine, then stir in the oat milk and vanilla essence.  
  3. Mix in the flour, baking powder, cinnamon and ginger. After this, fold in the raisins and walnuts. If the mixture is too thick, add extra oat milk.  
  4. Spoon the batter into the prepared tin and smooth the surface. At this point, you’re able to get creative and decorate with additional toppings if you wish! We normally go for chopped banana and chocolate chips. 
  5. Bake in the preheated oven for 45-50 mins, or until a skewer inserted into the middle comes out clean.  
  6. Set the loaf aside to cool in the tin for 10 mins, then turn out onto a cooling rack before serving.
