Lemon Blueberry Porridge
We’ve been lucky enough recently to work with an incredibly talented friend of the brand @grounded_kitchen to bring to life a series of simple everyday oat based recipes, utilising your favourite oat m!lk. First up is a beautifully light Lemon Blueberry Porridge to capitalise on the flux between winter and spring. It's still cosy and warm but the pop of lemon signifies the brighter days to come.
 
Lemon Blueberry Porridge
 
Ingredients:
 
For the base
* ⅓ cup organic oats
* ½ cup Otis oat m!lk, the organic one
* 1 & ½ cups water
* Pinch salt
* 1 serve// 30g vanilla plant protein
* 1/4 lemon, zested
 
To top
* ½ cup frozen blueberries
* ¼ cup coconut yoghurt
* Lemon zest
* 1 tsp LSA (linseeds, sunflower seeds, almonds)
 
Method:
 
Start by toasting the oats for a minute in a saucepan over medium heat. Then add your Otis along with a cup of water and a pinch of salt. Bring to a boil and then reduce to simmer, stirring every few minutes until all the water is absorbed. Next add in the vanilla plant protein, and stir until completely combined. Add the remaining ½ cup of water in small increments, or until it has reached your desired consistency. Remove from the heat and stir through the lemon zest.
 
Pour into a bowl and top with the blueberries, coconut yoghurt, LSA and lemon zest.
 
Sit down in a quiet sunny spot, arm yourself with a spoon and tuck in, it’s a sure-fire way to start the day right.
