Salted chocolate mousse

Salted chocolate mousse
If you were ever searching for a quick and delicious yet nourishing dessert look no further. This mousse is rich and creamy, with a lovely natural sweetness from the dates and the oat m!lk. It’s packed with nutrients and comes together in a matter of minutes. Let’s get down to business…

The ingredients, serves 2:
1/2 cup roasted cashews
(or raw soaked cashews, rinsed to make it more creamy)
1 cup of extra cold Otis Oat Milk, the Barista One (you can also use, the Chocolate One instead if you’ve got it!)
1/4 cup cacao powder
2 dates, de-pitted
2 tbsp chia seeds
Pinch salt
Chocolate of choice, for grating on top
Optional: 2-3 tbsp maple syrup (if you want to bump up the sweetness a touch!)

Method:
Add all the ingredients to a blender or food processor and blend until smooth. I find what works best is to start on low and gradually build up the speed, scraping now the sides as needed. Spoon into two glasses and grate dark chocolate on top. Can be enjoyed straight away or store in the fridge for later (I find the later rarely occurs :))
