Oatmeal, Crispy Cinnamon Apples & Peanut Butter

Beyond just the flavour combination, this is my favourite way to make an oatmeal base for any toppings. The oats are lovingly cooked with water and salt first so they can completely break down and absorb all the liquid before protein and oat milk is added for both flavour and creaminess. It makes the perfect texture every time.

The ingredients, serves two:
The base
- 2/3 cup quick oats
- 2 cups water
- Pinch of salt
- 2 serves//30g vanilla plant protein*
- Otis Oat M!lk, The Barista One

To top
- 1 granny smith apple, diced
- Cinnamon
- Smooth roasted & salted peanut butter

Method:
Add the oats, water and salt to a medium sized saucepan and bring to a boil. Meanwhile add the apples and cinnamon to a pan over medium heat with a splash of water. Let them cook away, stirring occasionally until the apples soften adding small dashes of water as needed. Once cooked, let any remaining water evaporate so the apples can caramelise slightly on the edges before taking them away from the heat to serve.


Once the oats completely absorb all the water and are frothing on top, give them a good stir to make sure it’s not sticking to the pan. Turn the heat to low and fold through the protein powder, as it absorbs the liquid add in splashes of the oat milk until it reaches your desired consistency. Remove from the heat completely then bowl up with the apples, peanut butter and any other toppings you desire Enjoy!
